Sun Cupcakes

Here’s What You’ll Need (Makes 12)

Here’s a cheeky tip: Instead of purchasing all the cupcake ingredients, you can skip straight to the fun part by buying a pack of your favourite ready-made cupcakes, or a pack of cupcake mix from your local supermarket!

For the cupcakes:

  • 125g caster sugar
  • 125g butter or margarine, softened
  • 125g self-raising flour
  • 2 large eggs
  • 1tsp vanilla extract
  • 12 Cupcake Cases

Here's What You'll Do:

Bake Your Cupcakes:
  1. Whisk together the butter, sugar and vanilla extract into a large bowl. Sift in the flour, add the eggs and beat everything together.
  2. Pop your cupcake cases into a cupcake tray. Using a large tablespoon, fill each cupcake case half full with your delicious mixture.
  3. Place in the oven and bake at 180C for 20 minutes (You’ll know they’re fully baked when you insert a wooden skewer and it comes out clean). When finished, remove from the oven and leave to completely cool.
Decorate:
  1. Firsty, let’s make the white sugar paste base. On a clean worktop roll out your fondant icing to about 0.5cm thick. Take a round cookie cutter that’s roughly the size of your cupcakes and cut out 12 circles (Pro tip: you can also use a clean round glass instead to cut out the circles). If needed, reroll the scraps, roll out and cut out more circles! Set them aside to harden
  2. Next, pop your Vanilla Frosting in a medium-size bowl. Add in your Blue Food Colour Gel and mix thoroughly until the frosting’s colour is blue throughout. Pop your blue frosting and, using a round nozzle tip, pipe a small circle over your cupcakes.
  3. Once your white fondant circles have hardened, take your Cake Pens and draw your sun on each of the circles and any other doodle design you like! Finally, place the sunny fondant bases on top of each cupcakes. Gently push them in the frosting to set the base and you’re done!
