Father's Day Medal Biscuits

Here’s What You’ll Need for 10 Biscuits:

Here’s a cheeky tip: Instead of purchasing all the biscuit ingredients, you can just buy a pack of your favourite ready-made biscuit mix from your local supermarket!

For the biscuits:

  • 175g Salted Butter
  • 250g Plain Flour (save some extra for dusting)
  • 100g Icing Sugar
  • 1 Large Egg Yolk

Here's What You'll Do

Bake your biscuits:
  1. Cut your butter into small cubes. Tip the butter, flour and a pinch of salt into a food processor. Blend the ingredients until the mixture resembles breadcrumbs and the butter is well mixed in. Add the icing sugar, egg yolk and 2 tsp cold water to the mixture, and blend again until the mixture starts to clump together (If the dough looks too dry add in 1tsp of water, but try to avoid adding any more, as this will make the biscuits tough).
  2. Bring the mixture out onto a work surface and squash everything together to make a ball of dough and the mixture is even thoroughly. Wrap in cling film, pat into a flat disk and let the dough chill for about 30 mins. While the dough is prepping, pre-heat your oven to 180C/160C fan/gas 4. Line a large baking tray with parchment paper (you might need to do this twice to fit all the skull biscuits). Dust your work surface with flour.
  3. Unwrap your dough and roll it out to about 3mm thick on top of the dusted surface. Now, either using a cookie cutter or cutting guide, stamp out as round shapes as you can, then squash the scraps of dough back together, reroll and stamp out a few more. Make a hole at the top of each circle with the end of a pencil.
  4. Arrange the shapes over the tray and bake for 18-20 mins, until just golden. Leave to cool on the tray for 10 mins, then transfer to wire racks to cool completely.
Time to Decorate:
  1.  Take your White Sugar Paste, knead it and roll it out to about 3mm thick or about the same as you rolled your dough for the biscuits. Take your cookie cutter/cutting guide and cut out fondant circles for each of the biscuits. Make a hole at the top of each circle and leave them on the side to harden for about 15 minutes.
  2. Once your icing has hardened, it’s time to assemble the bakes. Pop some Edible Glue on top of each biscuit and place the white icing on top of each of the biscuits, making sure the holes are placed on top of each other. Using your Edible Pens, draw and doodle as your heart pleases to bring your biscuits to life. Finally, insert your ribbons through the holes in the biscuits and you’re done!
