Rudolph Cupcakes

Mark your Calen-deer and plan in to bake these fun and delicious Rudolph Cupcakes. Made with chocolate cupcakes, chocolate frosting, brown sugarpaste and decorated with Edible Eyes and Christmas Crazy Faces, these cupcakes just scream FESTIVE!

Here's What You'll Need To Make 12:

For The Chocolate Cupcakes:

200g Self Raising Flour

200g Softened Butter

100g Soft Brown Sugar

4 Eggs

50g Cocoa Powder

100g Melted Dark Chocolate

For Decorating:

400g Chocolate Icing

250g Pack of Brown Sugar paste

Here's How:

Bake Your Cupcakes:
  1. Preheat your over to 140C. Whisk together the butter and sugar in a large bowl. Sift in the flour, cocoa powder and mix again. Add the eggs and beat everything together. Add in the melted dark chocolate and mix through until you achieve a nice and smooth mixture.
  2. Pop your cupcake cases into a cupcake tray. Using a large tablespoon, fill each cupcake case ¾ full with your delicious chocolate mixture.
  3. Place in the oven and bake at for 35 minutes. (Pro tip: you’ll know your cupcakes are ready when you insert a wooden skewer or metal knife and it comes out clean). When finished, remove from the oven and leave to completely cool.
Decorate:
  1. First, let’s prep the brown sugar paste. Flour your worktop and knead your fondant icing. Using a rolling pin, roll it out till it’s about 5mm thick. Once done, take large round cookie cutter or a mug and cut out 12 large circles (about 7cm in diameter will be enough, it all depends on how much frosting you want to use – they should fit over it!). 
  2. Place your chocolate frosting in a piping bag with a round nozzle attached to it. Take your cooled cupcakes and ice a round top on all cupcakes. Now, take your brown sugar paste circles and carefully drape them over the piped icing (You can push the top of it a little bit down to make a smoother upside-down bowl shape).
  3. Now it’s time for the fun decorating part! Carefully dig in two small holes on top of the fondant where your cupcake’s antlers will go. Squeeze in some Edible Glue to secure its place and put in two antlers on each cupcake. Take a pair of Edible Eyes and one Red Nose from the Christmas Crazy Faces pack and, using the Edible Glue to stick, attach them just below your cupcake’s antlers. Finally, draw in Rudolph’s mouth using the Cake Pens!
