To celebrate the launch of our brand new Cake Lace Kit, we wanted to share a simple yet stunning way to decorate vanilla cupcakes with cake lace. Using the butterfly mould that can be found on the silicone mat provided in the kit, you can instantly transform your cupcakes into something beautiful.
Vanilla cupcakes:
• 110g softened butter
• 110g caster sugar
• 2 eggs
• 1 tsp vanilla extract
• 110g self-raising flour
• 1-2 tbsp milk
• Preheat your oven to 180C/Gas 4 and line a muffin tray with cupcake cases of your choice
• Cream the butter and sugar together in a bowl until light and fluffy. Gradually beat in the eggs and stir in the vanilla extract until all ingredients are combined
• Stir in the flour using a large spoon and add a little milk at a time until the mixture is of a dropping consistency. Spoon the mixture into the cupcake cases until they are half full
• Bake in the oven for 10-15 minutes, or until they look golden-brown on top. Set aside to cool for a few minutes, before removing from the tray and leaving to cool on a wire rack
Buttercream frosting:
• 140g softened butter
• 280g icing sugar
• 1-2 tbsp milk
• Beat the butter in a large bowl until soft and fluffy, and then add half the icing sugar and beat well
• Add the remaining icing sugar with one tablespoon of milk, adding more milk if you need to make the mixture thinner. Beat until the consistency is smooth and spreadable
• Transfer the mixture into a piping bag and pipe the icing onto the cupcakes to create a large swirl
Cake Lace:
• Preheat your oven to 80-90C
• Spread the lace mix evenly onto the silicone mat with a pallet or flat sided knife, ensuring that the mix coats the butterfly mould
• Remove any excess by lightly scraping the silicone mat and return any unused lace mix to the pot for future use
• Place the filled mat into the oven and leave to bake for approximately 12-14 minutes
• Remove the mat from the oven and allow to cool for 5 minutes
• Check your Cake Lace is ready by gently peeling the edge from the mat. If the lace does not peel from the mat then place the mat back in the oven for a further 2-5 minutes
• Gently place the dried Cake Lace butterfly onto your freshly frosted cupcakes
Top Tip: Gently fold your dried Cake Lace butterflies in half to create 3D effect wings.
