Father’s Day Medal Biscuits

Here’s What You’ll Need
125g cold unsalted butter (cubed)
125g caster sugar
250g plain flour
1 egg
1 tsp vanilla extract
White sugarpaste
Cake Décor Edible glue
Cake Décor Cake pen
Ribbon
Here's What You'll Do:
- Beat together butter and sugar until creamed.
- Add in egg and vanilla and beat again, your mixture might look odd but it will come together with the flour.
- Add in flour and mix until a dough is formed.
- Turn out onto a floured surface and knead the dough into a ball and then cover with film and chill in the fridge for 1 hour.
- Once chilled, roll dough out on floured surface, using a large round cutter to cut out your biscuit shapes. Use a straw or sharp knife to cut out a small hole at the top of each biscuit.
- Place your shapes on prepared baking trays and place in the fridge to chill again for 30 minutes.
- Preheat oven to 190ºC/180 ºC
- Bake biscuits for 12-15 minutes until golden brown.
- Leave to cool slightly on tray before transferring to a wire rack to cool fully.
- Once fully cool your biscuits are ready to decorate.
Decorate:
- Roll out the sugarpaste and using a round shaped cutter, cut out sugarpaste to stick onto each biscuit with Edible Glue.
- Make sure you cut out a hole in the sugarpaste over the hole which has been baked into the biscuit.
- Repeat when all biscuits are covered, leave for a few hours to allow the sugarpaste to harden.
- Once sugarpaste has dried and hardened you can decorate with Cake Pens to create an extra special personalised medal for your Dad.
- Once you are happy with your design, cut a length of ribbon, thread it through the hole in the biscuit and tie a know in the end. (Make sure you make it large enough for your Dad to wear before he eats it!)
