Don your apron, round up your ingredients, and get set to sprinkle some beachy bliss into your next festivity!

Here’s What You’ll Need

150g unsalted butter or baking spread

150g caster sugar

150g self-raising flour

3 medium eggs

½ tsp vanilla extract


250g softened butter

500g icing sugar

1tsp vanilla extract

White sugarpaste

Blue colour gel

Digestive biscuits

Here's What You'll Do:
  1. Begin by preparing your sugarpaste decorations. Roll out some some white sugarpaste until it is around 4mm thick. Place on a flat surface or tray to harden (top tip … keep it away from plastic as it will not dry out).  Rolling this out the day before you decorate your cupcakes will allow it to dry out and harden fully but at least allow it to dry for a few hours.
  2. Preheat oven to 170ºC/160 ºC and line a 12-hole cupcake tray with cupcake cases.
  3. Cream together the unsalted butter/ baking spread and caster sugars until light and fluffy.
  4. Add in eggs, self-raising flour and vanilla extract and beat.
  5. Scoop the mixture evenly into the cupcake cases and bake in the oven for c. 20 minutes or until cooked through. (Springy to touch or a skewer comes out clean.)
  6. While allowing cupcakes to cool prepare the buttercream and decorations.
  1. Beat together softened unsalted butter and icing sugar until light and fluffy.
  2. Add vanilla extract and blue colour gel and beat again.
  3. Using a pack of cake pens draw some shell and starfish designs on your dried out piece of sugarpaste. Once you have coloured in your design, outlining it with the black cake pen will help the colours pop.  Repeat until you have enough shapes to decorate all 12 cupcakes.
  4. Once you have created all shapes, take a sharp knife, and carefully cut around your black outline. This will leave you will some colourful, shapes ready to decorate your cupcakes with.
  5. Once cupcakes are cool, ice your cupcakes, spread the buttercream on top of the cupcakes. You don’t need to be neat as the blue buttercream will be your ‘sea’ at the beach … it can look a little bumpy.  Repeat for all 12 cupcakes.
  6. To finish off your design, place a few digestive biscuits in sandwich bag and crush until you have ground the biscuits down to resemble sand. Carefully sprinkle some of your biscuit sand on each cupcake.
  7. Place your cake pen decorated sugarpaste decorations on the edge of the blue buttercream and biscuit sand to finish off your beach cupcake.
