Gingerbread Super Mums

Celebrate Mother’s Day in a superhero style with these adorable superhero mum gingerbread biscuits!

Here’s What You’ll Need

100g unsalted butter

3 tbsp golden syrup

100g soft light brown sugar

226g plain flour

½ tsp ground ginger

1 tsp ground cinnamon

Here's What You'll Do:
  1. Prepare baking trays with greaseproof paper.
  2. Melt butter, golden syrup and sugar together in 30 second bursts in the microwave. Once butter has melted, stir until the sugar has dissolved and the mixture is smooth and caramel like in texture.  Set aside to cool.
  3. Mix together all dry ingredients.
  4. Add the melted mixture to the dry ingredients, mixing well before kneading on a lightly floured surface. If you cannot bring the mixture together, add a little water, a few drops at a time.
  5. Roll out the gingerbread mix and use a small gingerbread man cutter to cut out your biscuits. Place all cut biscuits on prepared trays and chill in the fridge for 1 hour.
  6. Preheat oven to 170 ºC/ 160 ºC (fan) and once chilled, bake shapes for 10-15 minutes.
  7. Leave biscuits to cool before moving to a wire rack to fully cool before decorating.
Decorate:
  1. Once cool, use writing icing tubes to decorate your Super Mum Biscuits.

(Top tip1: to help make your Super Mum have lifelike eyes, pipe on a small white circle before topping with a smaller black writing icing dot as the pupil.)

(Top tip 2:  To help with placement use writing icing to add your Super Mum cape and pants, before using a cake pen to write on your gingerbread Super Mum’s tummy.  This helps to make sure you don’t cover up any of your writing with the cape.)
