Gingerbread Firework Biscuits

Let’s start the new year with a BANG! And these gingerbread firework biscuits are exactly what you need to get the party started this New Years Eve!

Here’s What You’ll Need

100g unsalted butter

3tbsp golden syrup

100g soft light brown sugar

225g plain flour

½ tsp baking powder

1tbsp ground ginger

1tsp ground cinnamon

Here's What You'll Do:
  1. Melt the butter, golden syrup and sugar together and stir until the sugar has dissolved and the mixture looks caramel in colour. (This can be done in 30 second blasts in the microwave or in a pan on the hob).  Leave to the side to cool slightly.
  2. Mix plain flour, baking powder, ginger and cinnamon in a bowl.
  3. Add the melted mixture to the dry ingredient, mix and then knead in a bowl to begin with, before moving to continue kneading on a lightly floured surface. If the mixture is very dry and will not come together at all, add a little water – just a few drops at a time, to help.
  4. Roll out the dough on flour to a 5mm thickness and cut out shapes with biscuit cutters. (This dough can be reworked as many times as you need to for all of your shapes).
  5. Transfer cut shapes to line baking trays, leaving a space around all biscuits in case they spread slightly, and leave to chill in the fridge for around an hour.
  6. After chilling, bake the biscuits at 180 ºC /170 ºC (fan) for 10-15 minutes.
  7. Once baked leave to cool and harden on the baking trays before moving onto a drying rack.
  1. Once cool, use our writing icing tubes to add swirls and lines to your firework biscuits, adding some glitter spray for an extra special sparkly finish.
