New Years Eve Cupcakes

New Year’s Eve is calling and It’s time-o’clock to celebrate with some delicious bakes! If you want to impress your guests this year, these are the cupcakes to do it!

Here’s What You’ll Need

175g unsalted butter

175g caster sugar

3 medium eggs

135g self-raising flour

40g cocoa powder

1 tbsp milk

Buttercream

250g unsalted butter (softened)

500g icing sugar

1 tsp Vanilla Extract

Oreos

Here's What You'll Do:
  1. Preheat oven to 170ºC/160 ºC and line a 12-hole cupcake tray with cupcake cases.
  2. Cream together the unsalted butter/ baking spread and caster sugars until light and fluffy.
  3. Add in eggs, self-raising flour and cocoa powder and beat.
  4. If your mixture is too thick you can add in 1 tbsp milk. Add a little bit at a time.
  5. Scoop the mixture evenly into the cupcake cases and bake in the oven for c. 20 minutes or until cooked through. (Springy to touch or a skewer comes out clean.)
  6. Leave the cupcakes to cool completely before decorating.
Decorate:
  1. While allowing cupcakes to cool prepare the buttercream.
  2. Beat together softened unsalted butter and icing sugar until light and fluffy.
  3. Add vanilla extract and beat again.
  4. Prepare a piping bag with a star shaped nozzle and add in the vanilla buttercream.
  5. Prepare your clockface by carefully taking the top off an oreo, leaving a flat layer of cream on one side of the biscuit. On this carefully draw on a clock face using cake pen/ writing icing.
  6. To create your cupcake, pipe a swirl onto your cupcake and then top with the oreo clock face.
