Melted Snowman Cupcakes

In the words of Olaf ‘Some people are worth melting for’ which is true they are also worth baking for which is why you need to create our super cute Melted Snowman Cupcakes. Here’s all you need to know.

Here’s What You’ll Need

150g unsalted butter or baking spread

150g caster sugar

150g self-raising flour

3 medium eggs

½ tsp vanilla extract

6 white marshmallows

Cake Décor Coloured Writing Icing

Royal icing sugar

Rolos

Dark chocolate 100g

Here's What You'll Do:
  1. Preheat oven to 170ºC/160 ºC and line a 12-hole cupcake tray with cupcake cases.
  2. Cream together the unsalted butter/ baking spread and caster sugars until light and fluffy
  3. Add in eggs, self-raising flour and vanilla extract and beat.
  4. Scoop the mixture evenly into the cupcake cases and bake in the oven for c. 20 minutes or until cooked through.  (Springy to touch or a skewer comes out clean.)
  5. Allow cupcakes to cool fully on a wire rack before decorating.
Decorate:
  1. While waiting on cupcake to cool, start preparing the snowmen hats. Melt dark chocolate and prepare a sheet of greaseproof paper on a baking sheet. 
  2. Once melted, use a teaspoon to blob a circle of melted dark chocolate onto the greaseproof paper. Ideally this should be slightly wider than a Rolo. Then place your Rolo on top of the chocolate blob, pushing down so the chocolate slightly spreads out, giving the look of a brim of a hat. 
  3. Repeat until you have made 12 hats and place on a tray in the fridge to speed up setting. Once the chocolate has fully set the hats should be easy to remove from the greaseproof paper.
  4. Prepare Royal Icing according to directions on the pack. For best results the mixture should be smooth but thick enough to run very slowly off your spoon.
  5. Cut 6 white marshmallows in half, length ways. These will be used to form a head for each cupcake.  Place the sticky side of the cut marshmallow onto the top of each cooled cupcake.
  6. Using a teaspoon add a little royal icing over each marshmallow. Allow time for the royal icing to run down over the marshmallow and cupcake, remember a little of the icing does go a long way.  Allow the iced cakes to sit for 5 minutes before continuing
  7. Place a chocolate hat at an angle on top of the snowman’s head.
  8. Using a black writing icing tube, add two eyes to your snowman and with an orange writing icing tube add a carrot shaped nose. If you have an icing drip down the front of your cupcake case, you can also add some extra black writing icing buttons.
