Strawberry Monster Cupcakes

These spooky Strawberry Monster Cupcakes are guaranteed to hit the sweet spot this Halloween. With some Edible Eyes and Writing Icing, it really is so easy to turn any plain cupcake into a fantastic Halloween treat. Don’t berry-ive us? Just follow this recipe to see just how easy it is.

Here’s a cheeky tip: Instead of purchasing all the cupcake ingredients, you can skip straight to the fun part by buying a pack of your favourite ready-made cupcakes, or a pack of cupcake mix from your local supermarket!

For the vanilla cupcakes:

  • 125g caster sugar
  • 125g butter or margarine, softened
  • 125g self-raising flour
  • 2 large eggs
  • 1tsp vanilla extract

Bake Your Cupcakes:
  1. Whisk together the butter, sugar and vanilla extract into a large bowl. Sift in the flour, add the eggs and beat everything together.
  2. Pop your cupcake cases into a cupcake tray. Using a large tablespoon, fill each cupcake case half full with your delicious mixture.
  3. Place in the oven and bake at 180C for 20 minutes. When finished, remove from the oven and leave to completely cool.
Decorate:
  1.  First, let’s make the Green Frosting. Place your Vanilla Frosting in a medium bowl and squeeze in a full tube of the Green Colour Gel. Mix well until the colour is fully mixed with the frosting and it’s now vibrant green. Transfer your green frosting in a piping bag with a piping nozzle attached. Take your cupcakes and pipe the green frosting on top of each of your cupcakes. 
  2. Now it’s time to create the strawberry monster! Place one strawberry on top of each frosted cupcake and gently push it in so it’s secure. Take your Black Writing Icing Tube and draw a small oval shape on the side of each cupcake. Take your White Writing Icing tube and, starting just outside the black icing towards just over it, draw in the monster’s teeth. Afterwards, take your Edible eyes and, using the Edible Glue to stick, place one eye on each strawberry just above the monster’s mouth.
  3. For the final touches, place the chocolate biscuits in a bowl or a plastic bag and crush them into small dust-sized pieces. Sprinkle these over the green frosting to add a little contrast to your cupcake and enjoy!
