Glazed Rainbow Doughnuts

Bring all the colours of the rainbow to your baking by following this Rainbow Doughnut Recipe. They’re fluffy, delicious, and most importantly – vibrant!

Here's What You'll Need:

For the dough:

200g plain (all purpose) flour

170g granulated sugar

½ tsp salt

1 tsp baking powder

¼ tsp baking soda

56g vegetable oil

140g buttermilk, room temperature

1 large egg

85g unsalted butter, melted

1 tsp vanilla extract

For decorating:

200g icing sugar 

2 tablespoons water or milk

Your favourite sprinkles

Here's how to bake these:

 

  1. Preheat your oven to 230C/450F. Prepare your doughnut pan by brushing it with some melted butter and set aside.
  2. To make your doughnut mixture, place the sugar and melted butter in a large bowl and whisk until smooth. Add in the egg, vegetable oil and vanilla extract and combine until smooth.
  3. In a separate bowl, sift in your flour, baking powder, baking soda and salt and mix until all your dry ingredients are combined.
  4. Grab your bowl of dry mixture and pour half of it in with the wet mixture and gently mix both together. Add in the buttermilk, slightly mix it in and then add the rest of the dry mixture. Mix it until it’s just combined – over mixing it will cause the batter to become too wet and will cause the batter to have a few lumps.
  5. Time to create the rainbow! Divide the doughnut batter equally between 5 bowls and colour each batter with each of the food colourings (The more colour gel liquid you put in, the more vibrant the colour will be). Mix together, making sure the colour gels are mixed in the batter thoroughly.
  6. Using a teaspoon, place each of the coloured mixtures in small amounts into each cavity of the doughnut pan next to each other, until ½ to ¾ full. Swirl a little to achieve a marbled effect.
  7. Pop your doughnuts in the pre-heated oven and bake them for 7-9 minutes. You’ll know the tops are done when they’re firm and bounce back when you touch them. Take them out the oven and carefully place aside. Let them cool in the pan for a couple of minutes, then carefully loosen and transfer to a wire rack to cool while you prepare your toppings.

Here's how to decorate:

  1.    In a medium sized bowl, sift in the powdered sugar. Whisk in the milk (or water) ¼ tsp at a time until smooth and the desired consistency is achieved (If it becomes too thin, simply add more powdered sugar).
  2.   Place the wire rack of donuts on top of a sheet to catch the extra glaze drips. Using a large spoon, spoon the doughnut glaze on top of your rainbow doughnuts. Immediately after, top your glazed doughnuts with your favourite sprinkles before the glaze hardens, and enjoy!
