Unicorn Cupcakes

Unicorn Frosting

Here’s what you’ll need to make 12 cupcakes:

Here’s a cheeky tip: Instead of purchasing all the cupcake ingredients, you can buy a pack of cupcake mix or skip straight to the fun part by buying a pack of your favourite ready-made cupcakes from your local supermarket.

For the delicious vanilla cupcakes:

  • 125g caster sugar
  • 125g butter or margarine, softened
  • 125g self-rising flour
  • 2 large eggs
  • 1tsp vanilla extract

For the colourful decorating:

  • Cake Décor Unicorn Frosting
  • White Fondant icing
  • Edible Gold Glitter Spray

Here’s what you do:

  1. Let’s start with the cupcakes. Preheat your oven to 200°C. Whilst your oven is heating up, whisk together the softened butter, caster sugar and vanilla extract in a large bowl. Sift in the flour and add the eggs and beat everything together until you get a beautiful, smooth mixture. Set 12 cupcake cases into a cupcake tray and, using a large tablespoon, fill each cupcake case half full of your delicious mixture. Place the tray in the oven and bake for about 15 – 20 minutes. (You’ll know they’re ready when the muffins have risen and springy to the touch). When finished, remove them from the oven and leave to completely cool.
  2. Whilst the cupcake bases are cooling, let’s make the unicorn’s horn and ears. Place the White fondant on a clean surface dusted with the cornflour and roll it out to 2mm/ ⅛in thick. Cut out small ovals and, using your fingers, mould one end together to create a triangle ear shape. Leave the ears on the side to harden. To make the horns, take a ball of the white fondant (the size of a walnut) and roll it into a thin tube shape with tapered ends. Bend the tube in the middle to bring the ends together, then twist the ends around each other to make a spiral. Dry them out for 30 minutes in a 60C oven, then leave to cool. Afterwards, spray them with edible gold glitter spray to create a magical hold unicorn horn.
  3. Let’s bring your unicorn to life! Take the Unicorn Frosting and Squeeze a generous amount on top of the vanilla cupcake base. Decorate it with a golden horn and two cute ears, and your unicorn is complete!
