You Will Need:
• Cake Decor Colour Gels – Pink & Purple Varieties
• 4 egg whites
• 200g caster sugar
• 2 x Piping Bags
• Piping Nozzles – we used one large star and one small star to give different patterns and sizes, but you can do both your colours the same if you prefer!
• 2 x Baking Trays lined with Baking Paper
What To Do:
Step 1 Take your egg whites in a bowl and whisk them, you want to get to a consistency where they create stiff peaks when you pull the whisk out, but the mixture shouldn’t be dry.
Step 2 Add one tablespoon to the mixture, then whisk again until the consistency returns to as it was at the end of step 1. Repeat this, adding the sugar a tablespoon at a time until it is all added in.
Step 3 Take one piping bag and stripe your first food colouring around the bag, then pour your mixture in and pipe your chosen shape on to your lined baking tray, then repeat with your second colour. Alternatively, if you don’t feel confident striping the piping bag, separate your meringue mixture into two bowls and add some of each of your colours to each bowl and stirring. For the effect our meringues have in the picture you still want there to be white in your mixture so go slowly!
Step 4 Put your meringues in the oven for an hour or until they lift away easily from the baking paper.
